Isle of Mull cheese is generally matured for 12–18 months, developing a firm and crumbly texture as it ages. Thanks to its raw milk production and natural rind, it sometimes displays blue veining, which is a classic sign of traditional farmhouse cheddar. The cheese’s robust taste and full flavour make it a popular addition to cheese boards, pairing especially well with malty ales, robust red and white wines, and other robust beverages
