Mrs Temple’s Wells Alpine, also known as Norfolk Alpine, is a semi-hard cow’s milk cheese produced by Dr Catherine Temple at Copy’s Green Farm on the Holkham Estate in Norfolk, England.
This cheese is made from the milk of Brown Swiss cows, which were imported from Bavaria and Austria specifically for this purpose.
The cheese takes 6 months to mature, developing a sweet and slightly nutty flavour profile with subtle irresistible sweetness. It has a supple texture, slightly bendy like its Alpine cousins, and is made following a recipe similar to Gruyère
